Instant sunshine popsicles ☀️

Peppermint-Melissa tea popsicles with Caramelised kumquat

Wow! How cool is that?!? To make popsicles of tea made from your own homegrown garden herbs!!

I love herbal tea made of peppermint and Melissa – it’s fresh, cooling and uplifting. It works perfect both as warm tea and ice tea, so if you have some leftovers after making tea in your tea pot, don’t throw it away!

And as a bonus melissa and peppermint both have some wonderful medical properties. Soothing, calming, antibacterial, supporting digestion and so on.

So, I got this idea it might be yummy to make iced tea popsicles.

I had a few kumquat from my friends greenhouse and I wanted to use these for something fun.

Citrus are all uplifting and works as instant sunshine. So this must be all good. ☀️

I decided I wanted to slice and caramelise the kumquat and thought they might be a fun addition to the iced tea popsicles.

This sounds like a time consuming recipe, but believe me; it’s not! It’s actually quite simple.

So here you go:

Peppermint-Melissa tea popsicles with caramelised kumquat

Aprx 1 litre (4 cups) of cold pre made peppermint & Melissa herbal tea. (Make the tea strong, the tea-taste will fade when frozen)

50 ml sugar

50 ml water

5 kumquat

Popsicle mold

Slice the kumquat in thin slices

Add sugar and water to a casserole and bring it to boil. Add the sliced kumquat.

Let it boil for aprx 5 minuets on high heat, or until most of the water have evaporated – make sure the liquid stay clear and doesn’t turn brown.

Take the kumquat slices out of the casserole and line them on a parchment paper to cool.

If it’s still liquid left in the casserole pour the remaining sugar-water-liquid into the iced tea, if not, add a little bit (1-2 teaspoons) of sugar or honey to the iced tea as sweetener and mix well to dissolve.

When the caramelised kumquat slices has cooled down addthem to the sides of your popsicle mold. They will stick to the sides pretty easily.

Pour over the iced tea and set the popsicle moods in the freezer. Let sit for at least 4 hours.

Take the popsicles out of the mold and enjoy!!

These popsicles are fresh and tasty. ☀️
