Fun, fermented summer limonade

🇬🇧🇳🇴 i somehow love to experiment and try out new ways to make all kinds of homemade food and beverage. I enjoy the process of making and of course the joy when my experiments turn out great and tasty.

Today I want to share one experimental, fun, fresh and healthy (probiotic) summer drink.

Fun, fermented, fizzy lemonade.

I’m a true fan of homemade limonade. However limonade often contains quite some sugar. Or sweetener.

This fizzy, fun fermented lemonade have almost no sugar left after feeding the probiotic bugs – which is actually a win win.

So, no more chitchat – here is the recipe in English and Norwegian:

🇬🇧🇬🇧Ingredients

• 1 lbs / 0,5 kilos organic lemons Aprx 5 of them total

• 3/4cup / 1,8 – 2 dl organic pure cane sugar Note – You can use honey, maple syrup (non artificial sweeteners) as sweetener but it won’t work as effectively as the cane sugar – the probiotic bugs in the whey feed on the sugar the best

• 1/2 cup / 1,2dl whey

Just scoop a container of plain whole yogurt into a dishtowel, leave it in a strainer and let it drip into a jar – the liquid dripped off is probiotic rich whey!

The leftover yogurt in the towel is like Greek yogurt and is perfect for for example tzaziki or raita.

• Water to fill a (1/2 gallon) 2 litre glass jar

Instructions

•squeeze the lemons and strain to get rid of the seeds

• Put your lemon juice, sugar, and whey into a 2 litre glass jar.

• stirr well until sugar is dissolved

• fill the rest of the jar with water leaving a few inches at the top.

• Put a lid on the jar, shake it up carefully, and leave it in a warm spot in your house for 3 days. If it is extra warm you may only need about 2 days.

The longer you leave the lemonade the more sugar the bugs will eat up – you can taste it every day if you want to test for sweetness.

• Transfer your fermented lemonade into swing top bottles and give them a second ferment to make it bubbly!

You can do this by leaving your fermented lemonade in the swing top bottles for about 3 extra days on your counter. Just add another tablespoon of sugar to each bottle to feed the bugs.

The second ferment may take longer if the temperature in your house isn’t very warm. Just test it after a few days to see if it is where you like it to be. It will get fizzier with time. It will also get less sweet and more sour.

• when you’re happy with your second fermentation of the lemonade, store the bottles of limonade in your fridge.

This is a super fresh and refreshing summer drink.

It’s healthy, contains “good for you ” probiotics and almost no sugar. Can’t get any better 😊

🇳🇴🇳🇴Norsk:

ingredienser

• 0,5 kg økologiske sitroner ca 5 stykker

• 1,8 – 2 dl økologisk rørsukker

Merk – Du kan bruke honning, lønnesirup (ikke-kunstig søtningsmiddel) som søtning, men det vil ikke fungere like effektivt som rørsukker – probiotiske bakterier i mysen trives best når de kan spise sukkeret

• 1,2 dl myse

Bare hell opp ett beger med naturell yoghurt i et kopphådkle, heng den i en sil og la den dryppe ned i en skål – væsken som drypper med av er myse rik på probiotiske melkesyrebakterier.

Den resterende yoghurten i håndkleet er som gresk yoghurt og er perfekt for f.eks. Tzaziki eller raita.

• Vann til å fylle en 2 liters glasskrukke

Framgangsmåte

• press sitronene og sil juicen for å bli kvitt steinene.

• Ha sitronsaft, sukker og myse i en 2 liters glaskrukke.

• rør godt til sukkeret er oppløst

• Fyll resten av krukken med vann til det er igjen et par cm til toppen.

• Sett et lokk på krukken, rist forsiktig og la det stå på et varmt sted i huset i 3 dager. Hvis det er ekstra varmt, trenger du kanskje bare la det fermentere ca 2 dager.

Jo lenger du lar lemonaden stå desto mer sukker vil mysen spise opp – du kan smake hver dag hvis du vil for å teste hvordan det smaker.

• Hell din fermenterte limonade i flasker med svingtopp og gi dem en ny fermentering for å gjøre dem sprudlende.

Du kan gjøre dette ved å sette den fermenterte limonaden i svingtoppflaskene i 3 ekstra dager på kjøkkenbenken din. Bare tilsett enspiseskje sukker til hver flaske for å mate mysen.

Den andre fermenteringen kan ta lengre tid hvis temperaturen i huset ditt ikke er så høy.

Bare test etter noen dager for å se om limonaden er slik du vil ha den.

Det blir mer “brus” med tiden. Det vil også bli mindre søtt og mer surt.

• Når du er fornøyd med den andre gæringen av limonaden, oppbevares flaskene i kjøleskapet.

Dette er en super fresh og forfriskende sommerdrikk.

Det er sunt, inneholder probiotika som er godt for magen og nesten ikke noe sukker. Kan ikke bli bedre 😊
