Cheers to the weekend

So, I was bragging about the unbelievably tasty elderflower limonade I got from my mom as a gift for my birthday.

This limonade is so good and really versatile. You can mix it with water and drink it as limonade. You kan mix it with hot water, lemon and honey and drink it as tea (it’s super good for your immune system)

You can mix it with mineral water and a drop of freshly squeezed lemon or lime and drink it as a sparkling refreshment … you can add it to your smoothie or any juice to add the delicious taste of elderflower… you can add it to sherbet, desserts, you can even mix it with a little bit of prosecco to make a summery, festive drink or mix it with white rhum, freshly squeezed lime, peppermint leaves, sugar and soda to make a mojito with a twist. 😊

Here in Oslo Elderflower is pretty rare, but along the coast of Norway and in other Scandinavian countries the elderflower bushes are common.

So, I was thrilled my mom managed to get quite a lot of elderflower from her neighbor and made me this awesome lemonade. She even said yes to share her recipe with you. 🧡

Moms best elderflower limonade

Aprx 40 freshly picked elderflowers

3 organic lemons

1 kg organic sugar

2 litre water

25 grams citric acid (you can leave this out if you want to – then the lemonade will have shorter shelf life )

Pick the flowers and shake them gently or in some way make sure there are no bugs on the flowers.

Add the flowers to large jar.

Cut the lemons into slices and add them with the flowers in the jar.

Now bring the water to boil. Add sugar and stir well. You want the sugar to dissolve to the water.

Let cool a minute or so and add citric acid. Stir well to dissolve into the water.

Pour the sugar-water over the flowers and lemons in the jar.

Set the jar aside and let cool. Store in the fridge for at least 48 hours.

Drain away the flowers and lemon slices.

Fill the lemonade to clean bottles with tight lid. We usually use old, brown beer bottles with porcelain bottle caps. They work perfectly.

Store the limonade in a cool place.

You can also add the limonade to clean cardboard juice boxes, fill them 3/4 full and freeze the juice for later use.

Serve chilled and add aprx 1 cup limonade/syrup and 2-3 cups of water.
