Best banana muffins

Today when I came home the whole house smelled divine of freshly baked goodness.

Sol (my youngest) baked banana muffins for school tomorrow. Lucky me got to taste one before she packed them into the cake tin.

Now I’m really lucky to have this young baker in the household and mostly it’s never hard to convince her to make something home baked.

Banana bread is a good thing … 1. You get good use of the overly ripe bananas and 2. If you skip the chocolate and switch the all purpose (white) flour for whole grain flour and brown sugar or honey instead of white sugar you have a yummy everyday treat.

Sols tasty bananuffins

Ingrediens

  • 2 to 3 very ripe bananas, peeled
  • 0,7 dl – 1/3 cup vegetable oil
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1,2 dl – 1/2 cup sugar (3/4 cup – 1,8 dl if you would like it sweeter)
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 3,5 dl – 1 1/2 cups of all-purpose flour
  • 1,2 dl – 1/2 cup whalenuts or any nuts of your choice
  • ( 0,5 dl – 1/4 cup finely chopped dark chocolate ) if preferable

METHOD

1 Preheat the oven to 175 degrees Celcius or 350°Farenheit. Prepare muffin pan or cups.

2  mash the bananas in a large bowl. Stir the oil into the bananas. Mix in the sugar, egg  and vanilla extract.

3. Whisk together the flour, baking soda, and salt. Finely chop the nuts.

4 Add the flour mixture to the banana mixture, a third at a time, stirring until it is just incorporated. (Do not over-mix! Over-mixing will result in dense, tough muffins.)

Fold in the chopped nuts (and chocolate) .

5 Fill muffin cups, and bake: Lightly spoon the mixture into a prepared muffin tin. Bake at 175*C / 350°F for 20-25 minutes.

Check for doneness by pressing down on the top of the muffin. If it bounces back, it’s done. You can also test by inserting a skewer or other tester into the center of a muffin. If it comes out clean, it’s done.

Cool on a rack.

Sols beste Bananmuffins

Ingredienser:

2-3 modne bananer

0,7 dl matolje

1 ts bakepulver

En knivsodd salt

1,2 dl sukker (1,8 dl sukker hvis du vil ha muffinsene søtere)

1 sammenvispet egg

1 ts vaniljeekstrakt

3,5 dl hvetemel

1,2 dl finhakkede nøtter

( 0,5 dl finhakket, mørk sjokolade – hvis ønskelig )

FramgangsmĂĄte :

1. Forvarm stekovnen til 175 grader. Gjør klar muffinsformer.

2. Mos bananen godt med en gaffel. Bland inn olje, sukker, egg og vaniljeekstrakt.

3. Bland mel, bakepulver og salt i en egen bolle. Finhakk nøtter og sjokolade.

4. Ha 1/3 av melblandingen i bananmiksen av gangen og rør lett.

Vend forsiktig inn de hakkede nøttene og sjokoladen.

5. Ha røren i muffinsformer og stek muffinsene midt i ovnen på 175 grader i ca 20 minutter.

Avkjøl muffinsene på en rist.
